Cherry Tomato Salad with Bocconcini and Basil

This cherry tomato salad is so basic, that it feels a bit dumb to give you a recipe for it. However, it is so simple and so damn tasty, that I couldn’t resist telling you about it.

I ended up only using half of this amount for the recipe as in, I used 2 punnets of tomatoes and 1 tub of bocconcini. It is very easy to double if feeding a large crowd though and because it can be prepared hours in advance, it’s also a great salad to make as part of a dinner party or a BBQ / banquet-style spread.

Baby bocconcini are little balls of mozzarella cheese. Some people find them quite flavourless, but I think they are delicious and that their texture is amazing. I can never help but pop some in my mouth as I go when I am making this salad :)

Buy the reddest, ripest, sweetest cherry tomatoes that you can. A basic salad like this needs fresh and delicious produce. For interest, I use one punnet of normal cherry tomatoes and 1 punnet of grape cherry tomatoes.

I also halve some of the tomatoes while quartering the rest. It just gives a bit of interest and texture to a very simple salad.

The amount of basil is up to you, I actually prefer a little less as I prefer it as more of a background flavour. The little bit of salt on the tomatoes and the marinating time, makes the tomatoes release a bit of their juice which will become the dressing for the salad.

You can either let the salad sit at room temperature for 30 minutes before serving, or, cover and refrigerate it for up to 6 hours before removing from the fridge and letting it stand at room temperature for at least 30 minutes before serving.

Just before serving, season with a little extra salt plus pepper and toss well to distribute the liquid that has settled in the base of the bowl. This cherry tomato salad is delicious as part of a BBQ spread, with white or red meats or even just served with crusty bread.

 

Cherry Tomato Salad with Bocconcini and Basil

Ingredients – Serves 3-4 as a side salad

  • 2 punnets of cherry tomatoes, about 500g worth. I use one punnet of normal cherry tomatoes and 1 punnet of grape cherry tomatoes
  • 1 x 220g tub of baby bocconcini cheese, cut in half
  • 1-2 tbs of finely sliced fresh basil leaves
  • ½ tsp of sea salt flakes plus extra for final seasoning

 

Directions

  1. Cut some of the cherry tomatoes in half and quarter the others.
  2. Toss together the cut tomatoes, basil, cheese and the ½ tsp of salt in a large mixing bowl and either let sit at room temperature for 30 minutes before serving, or, cover and refrigerate for up to 6 hours before removing from fridge and letting stand at room temperature for at least 30 minutes before serving.
  3. Just before serving, season with a little extra salt plus pepper and toss well to distribute the liquid that has settled in the base of the bowl. Delicious as part of a BBQ spread, with white or red meats or even just served with crusty bread.
