I really like a smoothie for breakfast, especially if I’m in a rush. If I’m going to have a smoothie for breakfast though, I need it to be filling. I don’t want to be hungry at 10am again. Choose your ingredients. Frozen berries, a banana and almond milk in my case. Add some chia seeds for their health benefits and blend it all up. Pour into a glass or travel mug and then quickly rinse out the blender so you don’t have to worry about it later. Easy peasy breakfast, which you can take on the go with you if need be.
I use unsweetened almond milk for my smoothie. Feel free to use cow’s milk or your favourite dairy alternative. I’ve found that a lot of dairy alternatives have sugar or sweetener added to them though so if you do use a sweetened one, eliminate or at least reduce, the honey.
I’ve become a big fan of chia seeds. They swell up once they hit a liquid so they are quite filling and they are full of fibre and a great source of Omega 3.
I’ve used frozen berries as they are easy to keep stocked in your freezer for an ’emergency’ smoothie when you are in a rush. Feel free to use fresh mixed berries or just one berry of your choice. Unless your blender is super powerful, you will need to defrost the frozen berries slightly. If you are organised, thaw them on the bench when you have your morning shower. Alternatively, zap them in the microwave very quickly so that they just start to soften.
I’ve found that so long as I rinse my blender straight after pouring out the smoothie, it only needs a good deep clean every few uses. My blender is quite old now but still reasonably powerful. I do find that I need to put the liquid in first and the fruits, honey and chia seeds on top of that to get a good blend. Get familiar with your blender and see what works best in yours though.
It is really damn hard to photograph a smoothie. I would normally just drink this smoothie with berries out of a tall glass for breakfast, but for the blog’s sake, I went all hipster and poured it into small milk-maid-style glasses :)
This makes enough for 1 tall glass (about 1½ cups worth) or 2 smaller glasses.
Breakfast Smoothie with Berries, Banana and Chia Seeds
Ingredients – Serves 1 – makes approximately 1½ cups worth
- 1/3 cup of mixed frozen berries, defrosted slightly
- 1 cup of unsweetened almond milk
- 2 tsps of chia seeds
- ½ tsp of honey
- 1 banana, broken into large pieces
- Ensure that the frozen berries are defrosted slightly by either taking them out of the freezer about 20 minutes before using, or, really quickly microwaving them until they are just starting to soften.
- Place all of the ingredients into a blender and blend until the berries and banana are completely broken up.
- Serve in a tall glass or 2 smaller glasses. Best served as soon as made.
